When it has been covered you either take off the soil or, in our case, remove the covering and the food, still wrapped in the foil, is all cooked.
You have to be very careful as it is really hot.
An umu is always used to cook food at special feasts. The underground ones are sometimes really big and they also cook pigs in them.
